Yield: 16 cupcakes
Preparation: Heat oven to 375 F. Place paper baking cups in 16 regular-size muffin cups. Beat all ingredients except frosting in large bowl on low speed for 30 seconds. Beat on medium speed 4 minutes. Fill muffin cups about 1/3 full. Bake about 15 minutes or until toothpick inserted in center comes out clean; cool completely. Frost and decorate cupcakes as directed below.
For each cupcake, you will need 2 large marshmallows, 2 miniature marshmallows and 2 semisweet chocolate chips.
To make ghost:
Cut 1 large marshmallow in half; place one-half of cut marshmallow (the head) on top of whole marshmallow (the body) and attach with small amount of frosting. Press chocolate chips into marshmallow head for eyes. Make 4 small cuts in each miniature marshmallow to form fingers; flatten slightly. Attach marshmallow hands to ghost with frosting. Frost cupcake, place ghost on top. Frost top and bottom of ghost.
For each cupcake, you will need 1 oval cookie, black shoestring licorice and small gumdrops. Frost cupcake; sprinkle with cocoa (to resemble dirt).
To make gravestone:
Using a tube of icing write on the cookie to resemble a gravestone (RIP) ; stick bottom of cookie into center of cupcake. Make flower using licorice for the stem and cut gumdrops to form the leaves and flower petals and place in front of the gravestone cookie.
