Spanish Noodles and Ground Beef

Yield: 5 servings



In a large skillet over medium heat, cook the beef, green pepper and onion until meat is no longer pink. Drain beef and stir in the noodles, tomatoes, water, chili sauce, salt and pepper; mix well.

Cover and cook over low heat for 15-20 minutes or until the noodles are tender, stirring frequently.

Add bacon and serve.

“When I saw this recipe title (without a photograph of the dish), I thought to myself, "Hmmmm....wouldn't it be funny if this was that dish my late partner's mom used to make that their family called Spanish Macaroni. It was as surprisingly easy to make as it was delicious, but I admit, I used to give his whole family a hard time. Having grown up in the American Southwest (New Mexico and the Sonoran desert of Arizona), I'm pretty well-versed on cuisine derived from both Mexican and Spanish origins--and despite how tasty this easy casserole was, I never missed the opportunity to point out that there was really nothing at all "Spanish" about it! He passed away and our families fell out of touch and somewhere along the way the recipe and the memory were lost. But honestly, with it being so decidedly NOT Spanish, what are the chances I'd fine the same recipe some 25 years later!? This IS John's "Psuedo-Spanish" macaroni dish only his family used large elbow macaroni in place of egg noodles. I'm thrilled and I know what's for dinner tonight!”
