Tortilla Shrimp Bites

Yield: About 50 bites



In a bowl, blend the cream cheese and mayonnaise. Add the green onions, chillies, chili powder, garlic powder, salt, pepper and shrimp. Mix well.

Put about 1/8 cup of the filling on one end of a tortilla and roll up. Place the rolled tortilla, seam side down, on a baking sheet. Continue until all the tortillas are filled.

Refrigerate until ready to serve, up to several days. Cut each tortilla into about 5 pieces and insert toothpick into each.

Serve with salsa.

“Substitute Mexican creama for the mayo and roll up, bake seem side down in 350° oven until filling is heated through and gooey. Remove from oven and allow to set for 10 mins before serving. Now you have made enchiladas de Cameron's. Top with your choice of toppings. Guacamole, sour cream, salsa, cheese.....”
