Jazzy Jambalaya

Yield: Serves 5



1. In large skillet, saute rice-vermicelli mix as package directs.

2. Stir in 2 cups water, chicken, onion, tomatoes, garlic, hot pepper sauce and contents of seasoning packet; bring to a boil over high heat.

3. Cover; reduce heat to low. Simmer 10 minutes.

4. Stir in shrimp and green pepper. Cover; simmer 8 to 10 more minutes or until most of liquid is absorbed and shrimp turn pink.

“Doubled recipe because we are fairly big eaters. One turn probably would have been enough for the two of us. I loved it and have never been a fan of Jambalaya in the past due to rice. However, the Rice a Roni was perfect. Added cup of diced smoked sausage. I used frozen pre-cooked shrimp; removed tails and added during last four minutes of simmer. Let set and flavors marry for about ten minutes after simmer. Used Sirracha Sauce instead of Tabasco for mellowed bite. Bought sliced red, yellow and green peppers. Had I bought diced onions this would be a 20 minute quick excellent meal. Saved to my Recipe box. Excellent meal. ”
